Join our team in Amanjena. Inspired by the rose-hued buildings of old Marrakech, palatial Amanjena is close to the fabled Red City, set in its own expanse of gardens and grand open spaces. Shaded courtyards with fountains lead to the central basin, bordered by spacious standalone Pavilions & Maisons, many with private pools. Views stretch across the olive groves and palms of the oasis, extending to the High Atlas Mountains on the horizon.

Amanjena will be undergoing a full renovation from June to October 2025. As part of this transformation, we are excited to introduce a brand-new dining concept: an Italian restaurant celebrating seasonal, fresh, and authentic cuisine. We are seeking a passionate and driven intern to join our Food & Beverage team during this pivotal time.

Role Summary:

The selected candidate will work closely with the Director of Food & Beverage, Corporate F&B team, Executive Chef, and Hotel General Manager to support the successful launch of the new outlet. This is a unique opportunity to gain hands-on experience in the pre-opening and operational phases of a high-end restaurant.

Responsibilities:

Pre-Opening Phase (July – September 2025):


* Assist in the development and refinement of the food and beverage menus, with a focus on authenticity and seasonality.
* Support the creation of beverage pairings and cocktail lists in collaboration with the bar team.
* Contribute to the design and implementation of staff training programs, including service standards and product knowledge.
* Participate in the setup of operational systems including POS programming, menu printing, and ordering processes.
* Help coordinate table pre-booking systems and guest experience planning.
* Liaise with suppliers and vendors to ensure timely delivery of equipment and ingredients.

Post-Opening Phase:


* Take a leadership role in daily operations of the restaurant.
* Conduct daily briefings with service and kitchen teams to align on goals, updates, and guest feedback.
* Monitor service quality and guest satisfaction, providing real-time support and solutions.
* Collaborate with the management team to continuously improve operational efficiency and guest experience.

Requirements


* Currently enrolled in or recently graduated from a Hospitality, Culinary Arts, or Business Management program.
* Strong interest in restaurant operations, Italian cuisine, and guest service excellence.
* Excellent communication and organizational skills.
* Proactive, detail-oriented, and eager to learn in a fast-paced environment.
* Fluent in English; Ideally Italian and French or Arabic is a plus
